Baked Chicken

Ingredients

2 tsp olive oil
700g chicken breast
1 brown onion, diced
3 stalks celery, sliced
1 tsp Italian seasoning
1 x (400g) tinned tomatoes
To serve:
180g rice (cooked)

Instructions

Preheat oven to 180°C/350°F/Gas 4.
Add the oil to a frying pan and bring to medium-high heat. Add the chicken and brown the
pieces all over.
Transfer the chicken to an ovenproof casserole dish.
In the same pan, add the onion, celery, Italian seasoning and tinned tomatoes and bring to
a boil.
Pour the tomato sauce all over the chicken and place in the oven for 45-55 minutes, or
until chicken is fully cooked.
Serve with a side of rice.
