Sicilian Pasta

Ingredients

150g penne pasta
1 tsp olive oil
2 cloves garlic, minced
90g pitted black olives
1 tbsp capers
300ml passata
1-2 tsp chilli flakes
95g tinned tuna, drained
Salt & cracked pepper
2 tbsp fresh basil, leaves picked

Instructions

Start by cooking the pasta according to packet instructions. Drain and set aside.
Meanwhile, bring a frying panto medium heat and add the olive oil, garlic, olives and
capers. Cook for about 2 minutes before adding the passata and chilli flakes.
Stir through the tuna, breaking up the chunks with your spoon. Add the pasta and continue
to stir through.
Divide into two bowls and garnish with fresh basil.
