Mediterranean Chicken

Ingredients

100g large green olives
100g artichoke hearts
(marinated in a jar)
1 red bell pepper, chopped
2 courgette, chopped
Salt & cracked pepper
2 chicken thigh cutlets
1 tsp oregano
50g feta, crumbled

Instructions

Preheat oven to 180°C/350°F/Gas 4. Line an oven-proof baking dish with baking
paper.
Combine the olives, artichoke, bell pepper, and courgette in a large bowl, along
with a little liquid from the artichoke hearts, salt & cracked pepper. Toss well to
coat and set aside.
Place chicken in the baking dish, skin side up, season with oregano and cook for
20 minutes.
Remove from the oven, add all the vegetables to the dish (with the chicken
still sitting on top) and cook for another 20 minutes or until the chicken is fully
cooked.
Divide on two plates and top with feta.
